Still searching for the perfect lemon chia seed recipe. The search has lead me to this recipe which I altered a little bit. No need to add so much sugar when there is already sugar in the lemon pudding.
1/2 cup butter, softened (110 g)
1/4 cup granulated sugar
2 large eggs
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp finely grated lemon zest or 1 tsp lemon extract
3/4 cup milk
1 tbsp lemon juice
3 tbsp chia seeds
1 package lemon flavored instant pudding mix (not jello)
How to Prepare:
Preheat oven to 375 F. With a mixer, beat the softened butter with the sugar until smooth. Add the eggs and beat some more. Then add the dry ingredients. Divide batter among 12 paper lined muffin cups. Bake for 20 minutes until tops are golden.
