For me, summer is always pizza time. When it's warm outside I don't want to stand over the stove cooking things... I want to be able to just throw something in the oven and then leave the kitchen. One of the pizza recipes that has become a staple in my kitchen is the Shrimp Pesto Pizza. I was served a pita pizza with similar toppings at a local restaurant, and I was so pleased with the flavour combination that I decided to steal the idea.
While the ingredients for the dough are important (don't mess with them), the quantities for the toppings are less strict and can be reduced or augmented as desired.
For the dough:
- 1 cup water
- 1 tbsp olive oil
- 1 tsp salt
- 3 cups all purpose flour
- 2 tsp baking machine yeast
Add all ingredients in order in the breadmaker, set on "Dough" and prepare. Once the dough is ready, spread roll it out and place it on pizza pan. Let rise for about 30 minutes. In the meantime, prepare the other ingredients.
For the toppings:
- 3 tbsp basil pesto sauce (I used the Unico brand)
- 125 g crumbled or diced light feta cheese
- 1 tomato, diced
- 300 g baby shrimp, cooked and peeled
Preheat the oven to 500 F. Spread the pesto on the pizza dough. Sprinkle with cheese, then shrimp and finally tomato. Bake for 15 minutes or until the crust is golden. Serve warm.
