My new favourite dish, bar none, is this goat cheese pizza. The image doesn't do it any justice, so you'll just have to take my word for it.
If you have a bread maker, you can get it to prepare the pizza dough for you:
- Add 1 cup of water,
- 1 tsp of salt
- 1 tbsp olive oil
- 3 cups flour
- 2 tsp bread machine yeast
to the bread machine and set on "Dough". If you prefer using a stand mixer, then add all the ingredients, mix, and let rise for a while.
Alternatively, you can either use store-bought ready to use pizza dough (ugh) or some sort of flatbread or naan bread or anything else that will be suitable for pizza.
When the dough is ready, roll it out, put on the pizza pan and add the toppings.
- Spread evenly with 140 g goat cheese (I use the reduced fat kind) and sprinkle with
- 1/4 cup real bacon bits
- 6 dried figs, sliced thinly.
Let the pizza rest outside the oven for 15 minutes or so to give it time to rise a bit.
Bake at 500ºF (lowest rack) for 13 minutes. Obviously, if using some sort of pre-cooked pizza base, you need to reduce the baking time and temperature accordingly.
In the meantime, prepare the glaze with
- 2 tbsp honey
- 2 tbsp balsamic vinegar
Add to a pot and let reduce slightly.
When the pizza is ready, top with a few handfuls of either arugula or baby spinach. Drizzle the arugula/spinach with the warm glaze. Put back into the oven for another minute or two, just until the leaves have wilted.
Serve warm. Mmmmmmmmmm!
